Shepherd stew (Čobanac)

The stew is prepare in a copper kettle over an open fire (made of wood).

Basically, the recipe for a good stew is lots of onions, chopped meat with spices and a long simmer (cooking). The basis of every good stew is sweet and a little hot, red pepper, meat for a stew is based on young beef (0.3 kg per person), and ox meat, and the other types of meat can be used, such as venison, which gives a special flavor.

The color of the stew has to be extremely red (“…stains can not be washed out”). It is well to add beef tail or pig knuckles, to get a density of stew.
The smell and taste of the stew is a dream of every good gourmet.

Enjoy shepherd stew with a good Baranja white wine.
